Reuben Sandwich: A Classic Any Time of Year

The Reuben Sandwich has been a deli favorite for decades in the U.S., and this Reuben is a classic any time of the year. We love to celebrate St. Patrick’s Day by fixing them pile-high for lunch. 

Be sure to seek out top-notch ingredients and make the Russian (Thousand Island) dressing from scratch. It’s easy and can be made several days in advance.

After you’ve warmed the corned beef, set up an assembly line using an electric griddle or a large non-stick skillet. You’ll essentially prepare this like you would a grilled cheese sandwich.

Note:
We order our corned beef from Katz Deli in NYC, but you can find excellent corned beef at any decent deli. We love to gently warm it in a heat-proof bag in simmering water for about 5 minutes. The corned beef and prepared Russian dressing will keep in the fridge for up to 5 days. 

Ingredients

• 8 slices rye bread

• 4 tbsp softened unsalted butter

• 1/4 cup classic Russian dressing (see bottom of page)

• 1 1/2 lb corned beef, thinly sliced

• 12 oz. sauerkraut, drained 

• 6 slices Swiss cheese

Instructions

1. Butter one side of each bread slice.

2. Heat a large  skillet or griddle over medium-high heat.

3. Place a slice of bread in the skillet, buttered-side down (place two if you have room. If not, you’ll need to keep the cooked sandwiches in a warm oven until they are all ready for serving.)

4. Add a tablespoon of Russian dressing to each slice of bread.

5. Add a nice heaping handful of the corned beef.

6. On top of this, add a layer of the sauerkraut.

7. On top of the kraut, add cheese slices.

8. Add another layer of Russian dressing.

9. Top with bread slice, buttered-side on top.

10. Once lightly browned, carefully flip the sandwich, and grill the other side until nicely browned.

11. Remove, slice, and serve at once! (You can keep the cooked sandwiches in a warm oven until they are all ready for serving.)

Russian Dressing
This Russian Dressing has a nice kick and an incredible flavor profile. Use in salads, egg or chicken salad, and of course…deli sandwiches, such as a Reuben. Amazing!

Ingredients

• 1 cup mayonnaise

• ¼ cup chili sauce (Heinz has a nice version, or find some in the Asian section of your supermarket)

• 2 tbsp sour cream

• 1 tbsp prepared horseradish sauce

• 1 tbsp Worcestershire sauce

• 1 tbsp grated white onion (a box grater works well)

• 1 tbsp flat-leaf parsley, chopped

• 1 tbsp dill pickles, minced

• 1 tsp freshly squeezed lemon

• Pinch of Kosher salt and freshly ground black pepper  

Instructions

1. Mix everything together in medium-sized bowl.

2. Taste and adjust seasonings.

3. Serve immediately or cover with plastic wrap and refrigerate. Can be kept up to 5 days.
